Terre Paisible's artisanal Extra Virgin Olive Oils are rich in antioxidants and free from additives and preservatives, crafted to celebrate the natural excellence of the Franschhoek Valley. The estate sustainably farms five Italian olive varieties: Favolosa, Frantoio, Leccino, Coratina, and Delicata. Each variety is hand-harvested and cold-pressed to preserve natural antioxidants and healthy fats, contributing to overall well-being. These olive varietals, like grapes, possess unique flavours, skill-fully combined to create three distinct styles that enhance a wide range of culinary creations.
Wine Tasting
The wines of Terre Paisible are crafted with a focus on quality and terroir. Grapes are meticulously selected from the estate's vineyards and other carefully chosen sites, where the terroir enhances varietal excellence. With his extensive expertise and passion, Winemaker Adam Mason creates small-batch vintages that celebrate the unique characteristics of the land. The estate is home to a rare block of 37-year-old, untrellised Old Vine Sauvignon Blanc, registered with the Old Vine Project, exemplifying its dedication to preserving its vineyards.
Winemaker Adam Mason, originally from Johannesburg, has always had a passion for food and wine. After earning his BSc in Winemaking/Oenology and Viticulture at the University of Stellenbosch, he gained international experience working in France's Rhône Valley, Roussillon, and Provence, as well as South Africa. His impressive career includes time as Cellar Master at Klein Constantia, where he crafted the renowned Vin de Constance, and as Head Winemaker at Mulderbosch, where he played a key role in revitalizing the brand. Before joining Terre Paisible, Adam founded his winemaking consultancy, VinMason.
At Terre Paisible, Adam crafts the estate's Sauvignon Blanc wines, including the 'Les Dames de 1987' Old Vines and Vigne d'Or Franschhoek Estate Sauvignon Blanc. The 'Les Dames de 1987' is made from 35-year-old vines, matured on the lees for nine months in a 4000L oak foudre, resulting in a fresh and elegant wine with notes of nectarine and apple and a rich texture. The Vigne d'Or Franschhoek Sauvignon Blanc offers a classic varietal expression, with hints of lime and tropical fruit and a long, elegant finish.
Adam also created the Terre Paisible Isabelle Rosé, a delicate and elegant wine made to honour the estate's owners. This small batch of only 1965 bottles blends Grenache and Mourvèdre, with subtle fruit aromas and a refined finish. With Adam at the helm, the future of Terre Paisible wines promises many award-winning vintages to come.
